Clean out your fridge and make this delicious soup!

Instead of throwing out all those organic vegetable in your fridge make a one pot soup.





Here is an idea of a soup you can make gathering some fresh produce that have in your fridge. You don't need to throw everything away but throw them in a pot, yummy! 😋

Sweat onions, carrots, and celery in extra virgin olive oil and tomato paste. The tomato paste adds lots of flavor to the soup.

Add more flavor with lots of

garlic, ground fennel seeds (or use other spices), pepper, and salt. Open up your cabinet and start adding away.


  1. Pour in vegetable or chicken stock, a can of diced tomatoes or fresh if you have them, potatoes, cabbage, and bay leaves.

  2. Simmer until the veggies are tender (about 20 - 30 minutes).

  3. Add frozen peas and cook five more minutes.

  4. Season to taste with more salt, pepper, cumin, fresh herbs, paprika, and a little acid like apple cider vinegar or lemon juice.

  5. Remove bay leaves when you are finished cooking


Feel free to just open up your spices and season to taste and whatever spices speak to your soul.

I don't do a lot of measuring I like to cook with love and everyone taste buds are different!

tablespoons olive oil

chopped onion (1 medium)

cups chopped carrot (3 to 4 carrots)

cups chopped celery (2 to 3 stalks)

tablespoons tomato paste

teaspoons minced garlic (4 cloves)

teaspoon ground fennel seed

teaspoon ground black pepper

teaspoon fine sea salt, plus more to taste

teaspoon crushed red pepper flakes (optional for heat)

1 can diced tomatoes with their liquid

stock or broth

smoked paprika

garlic powder

turmeric

ginger

cups chopped potato

chopped or shredded cabbage

2 bay leaves

frozen peas

1/2 teaspoon apple cider vinegar or fresh lemon juice, optional
